He’s a Colorado Native, with a penchant for altitude and cold smoke. Darrin’s first taste for mixology began in an Andean ski lodge, where he spent the winter season working with locals in the Chilean ski area, El Colorado. Shortly thereafter, he returned stateside, and headed to Aspen, Colorado where he honed his liquid skill set working in several of the bustling Après ski establishments. In 2007, he found himself in Boulder, and applied his knowledge behind the bar of Bacaro.
Darrin creates delicious cocktails using high end spirits, and fresh and house-made ingredients. A fan of mixing original and classic cocktails, he particularly enjoys crafting exciting drinks designed specifically for the tastes of individual customers’. In creating PastaVino’s drink menu, Darrin combined such original libations while including several of his favorite classics. Darrin appreciates living in a place where mixologists are plentiful which stimulates creativity, complemented by a growing number of local craft distilleries and breweries. He’s proud to offer a selection of quality Colorado spirits and craft beers.
